  • 3 celery stalks, sliced

  • 1 can (28 oz) crushed tomatoes
  • 6 cups low-sodium beef broth
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 tsp chipotle chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Add the beef stew meat to the pot and brown on all sides, about 5-7 minutes. Remove the beef and set it aside.
