Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil

  • 4 cloves garlic cloves, minced
  • 3 medium carrots, sliced
  • 3 medium Russet potatoes, peeled and cubed
  • 4 cups beef broth
  • 14.5 ounces canned diced tomatoes with green chilies
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the beef cubes to the pot in batches, browning them on all sides. Remove the beef from the pot and set aside.

In the same pot, add the chopped onion and saute until it becomes translucent, about 5 minutes.
