Ingredients

  • 250 grams beef sirloin
  • 2 packages ramyeon noodles
  • 2 tablespoons sesame oil
  • 1 medium onion
  • 3 pieces garlic cloves
  • 1 inch ginger
  • 1 tablespoon gochugaru (Korean red chili flakes)
  • 2 tablespoons soy sauce
  • 6 cups water
  • 2 cups beef broth
  • 2 small heads bok choy
  • 3 stalks green onions
  • 2 cups fresh spinach
  • 2 large egg
  • 0.5 cup kimchi

Directions

Step 1

Slice the beef sirloin thinly against the grain and set aside.

Step 2

Chop the onion finely. Mince the garlic cloves and ginger.

Step 3

In a large pot, heat sesame oil over medium heat. Add the sliced beef and sauté until browned on all sides.

Step 4

Add the chopped onion, minced garlic, and ginger to the pot. Sauté for 3-4 minutes until the onion becomes translucent.

Step 5

Stir in the gochugaru and soy sauce, cooking for another minute to let the flavors blend.

Step 6

Pour in the water and beef broth. Bring the mixture to a boil.

Step 7

Reduce heat to a simmer and cook for 15 minutes to allow the flavors to meld.

Step 8

While the broth is simmering, prepare the bok choy by trimming the ends and slicing the leaves in half.

Step 9

Chop the green onions and rinse the fresh spinach.

Step 10

Add the bok choy to the pot and cook for 2-3 minutes until just tender.

Step 11

In a separate pot, cook the ramyeon noodles according to the package instructions, then drain.

Step 12

Divide the cooked noodles between two serving bowls.

Step 13

Add the spinach and half of the chopped green onions to the broth and let them wilt.

Step 14

Carefully crack an egg into the simmering broth. Poach for 3-4 minutes until the whites are set, but yolks remain runny.

Step 15

Divide the beef and broth mixture evenly between the bowls of noodles.

Step 16

Top each bowl with a poached egg, the remaining green onions, and a generous portion of kimchi.

Step 17

Serve hot and enjoy your homemade Spicy Beef Ramyeon.
