  • 1 kg beef stew meat
  • 2 medium, diced onions

  • 1 tsp ground turmeric
  • 2 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 2 pieces bay leaves
  • 250 ml beef or chicken stock
  • 2 sliced (optional for extra spice) green chilies
  • 2 tbsp, chopped fresh cilantro
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.

Step 2

Add the cumin seeds and bay leaves to the hot oil. Sauté for 1-2 minutes until fragrant.

Step 3

Add the diced onions and cook until golden brown, about 8-10 minutes, stirring occasionally.

Step 4

Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until aromatic.

Step 5

Add the chopped tomatoes and cook until they break down and form a thick paste, approximately 8-10 minutes.

Step 6

Reduce the heat to low and add the ground turmeric, ground coriander, paprika, red chili powder, and garam masala. Stir well to coat the onion-tomato mixture with the spices.
