  • 3 pieces (medium-sized) ripe bananas
  • 150 grams granulated sugar
  • 50 grams brown sugar
  • 115 grams (melted) unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon crushed red pepper flakes
  • 75 grams chopped walnuts or pecans (optional)
  • 75 grams chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9x5 inch (23x13 cm) loaf pan with butter or non-stick spray, then line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, mash the ripe bananas with a fork until almost smooth. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, ground ginger, and crushed red pepper flakes.
