Ingredients

  • 3 medium zucchini
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 cup panko breadcrumbs

  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 as needed olive oil spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and lightly spray it with olive oil.

Wash the zucchinis and trim the ends. Cut each zucchini in half lengthwise, then slice each half into sticks that are approximately 3 inches long and 1/2 inch thick.
