Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoons Baking powder
  • 1 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Salt
  • 1 cups Brown sugar
  • 0.5 cups Vegetable oil
  • 2 large Eggs
  • 1 cups Apricot baby food (unsweetened)
  • 1 teaspoons Vanilla extract
  • 0.25 teaspoons Ground ginger

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Set aside.

Step 3

In another large bowl, combine the brown sugar and vegetable oil. Whisk until well blended.

Step 4

Add the eggs to the sugar-oil mixture, one at a time, beating well after each addition.

Step 5

Stir in the apricot baby food and vanilla extract until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined. Be careful not to overmix.

Step 7

Pour the batter into the prepared cake pan, spreading it evenly.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Step 10

Once cooled, serve as is or dust with powdered sugar for a simple garnish. Enjoy!
