Ingredients

  • 2 whole acorn squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium honeycrisp apples
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper
  • 0.25 cup chopped pecans
  • 0.25 cup dried cranberries
  • 1 tablespoon maple syrup

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Slice the acorn squashes in half lengthwise and scoop out the seeds and stringy pulp with a spoon.

Step 3

Drizzle the cut sides of the squash with 1 tablespoon of olive oil, then sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place the squashes cut-side down on the baking sheet.

Roast in the preheated oven for 40-45 minutes, or until the squash is tender and easily pierced with a fork.

While the squash is roasting, peel, core, and dice the apples into small chunks.
