Ingredients

  • 3 cups mixed nuts (almonds, cashews, pecans, walnuts, etc.)
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon fine sea salt
  • 1 teaspoon rosemary (finely chopped, optional)
  • 1 egg white (lightly beaten)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the mixed nuts and set aside.

Step 3

In a small saucepan over low heat, melt the butter. Add the brown sugar, honey, cinnamon, paprika, cayenne pepper, rosemary (if using), and salt. Stir until well combined and the sugar is dissolved. Remove the saucepan from heat and let cool slightly.

Step 4

In a separate small bowl, lightly beat the egg white until frothy but not stiff. Pour the egg white over the mixed nuts and toss to coat evenly.

Step 5

Pour the slightly cooled butter and spice mixture over the nuts. Stir gently to ensure all the nuts are evenly coated.

Step 6

Spread the coated nuts in a single layer on the prepared baking sheet.

Step 7

Bake the nuts in the preheated oven for 20-25 minutes, stirring halfway through the cooking time to prevent clumping and ensure even toasting.

Step 8

Remove the nuts from the oven and allow them to cool completely on the baking sheet. The coating will harden as the nuts cool.

Step 9

Once completely cooled, transfer the nuts to an airtight container for storage or serve immediately. These nuts can be stored at room temperature for up to 2 weeks.
