  • 0.5 cup natural peanut butter (unsweetened)
  • 15 ounces cooked chickpeas (canned, drained, and rinsed)
  • 1 medium sweet potato, peeled and diced
  • 2 cups baby spinach or kale
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium lime, juiced
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 2 tablespoons crushed peanuts (optional, for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add the diced onion and sauté until soft and translucent, about 5 minutes.
