Ingredients

  • 4 ears Fresh corn on the cob
  • 1 medium Red bell pepper
  • 1 medium Jalapeño

  • 0.25 cup Cilantro
  • 2 medium Lime
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Cotija cheese (optional)

Directions

Step 1

Preheat a grill or stovetop grill pan over medium-high heat.

Step 2

Lightly brush the ears of corn with 1 tablespoon of olive oil.

Place the corn on the grill and cook, turning occasionally, until slightly charred on all sides, about 8-10 minutes. Allow the corn to cool.
