  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups zucchini, grated
  • 0.5 cup chopped nuts (optional, such as walnuts or pecans)
  • 0.5 cup raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

In a large mixing bowl, sift together the flour, granulated sugar, brown sugar, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt. Whisk to combine.
