Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.5 teaspoons Ground ginger
  • 1 cups Plain yogurt
  • 0.5 cups Vegetable oil
  • 2 pieces Large eggs
  • 1 teaspoons Vanilla extract
  • 0.25 cups Milk
  • 0.5 cups Optional: chopped nuts or raisins

Directions

Step 1

Preheat your oven to 375°F (190°C), and line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger.

Step 3

In a separate medium-sized bowl, whisk the yogurt, vegetable oil, eggs, vanilla extract, and milk until smooth and well combined.

Step 4

Make a well in the center of the dry ingredients and pour in the wet ingredients. Gently fold the wet and dry ingredients together with a spatula or wooden spoon until just combined. Be careful not to overmix; the batter should be lumpy.

Step 5

If using optional add-ins like chopped nuts or raisins, gently fold them into the batter at this stage.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy your spiced yogurt muffins with your favorite cup of tea or coffee!
