  • 4 cups Watermelon (seedless, cubed)
  • 0.5 cups Honey
  • 1 piece Cinnamon stick
  • 3 pieces Whole cloves
  • 1 inch Fresh ginger (sliced)
  • 1 tablespoon Lemon juice

Directions

Step 1

Place the cubed watermelon in a blender or food processor and blend until smooth. Strain the watermelon puree through a fine-mesh sieve into a medium saucepan to remove any pulp. You should have about 2 cups of watermelon juice.

Step 2

Add the honey, cinnamon stick, whole cloves, and sliced ginger to the saucepan with the watermelon juice. Stir well to combine.

Step 3

Heat the mixture over medium heat, bringing it to a gentle boil. Once it begins to boil, reduce the heat to low and let it simmer uncovered for about 30–35 minutes, stirring occasionally.

Step 4

Keep an eye on the mixture as it reduces by half and thickens slightly. The consistency should be syrup-like but will thicken further as it cools.

Step 5

Once the mixture has reduced, remove it from heat and discard the cinnamon stick, cloves, and ginger slices. Stir in the lemon juice to brighten the flavors.

Allow the spiced watermelon honey to cool completely before transferring it to a clean, airtight jar for storage.
