  • 3 lbs venison roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground coriander
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 cup red wine
  • 1 cup beef or venison stock
  • 2 whole carrots, peeled and cut into large chunks
  • 2 whole celery stalks, cut into large chunks
  • 1 whole yellow onion, cut into wedges
  • 4 whole garlic cloves, peeled and smashed

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, ground cumin, ground cinnamon, and ground coriander.

Rub the venison roast all over with olive oil, then thoroughly coat it with the spice mixture. Let it sit at room temperature for 15 minutes.

Heat a large, oven-safe skillet or roasting pan over medium-high heat. Add a tablespoon of olive oil and sear the venison roast on all sides until browned, about 2-3 minutes per side.

Remove the venison from the pan and set it aside.
