Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons ground ginger
  • 0.25 teaspoons salt
  • 1 cups milk
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1 teaspoons orange zest
  • 0.5 cups chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt until well combined.

Step 3

In a separate medium-sized bowl, whisk together the milk, vegetable oil, eggs, vanilla extract, and orange zest.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Gently mix with a spatula or wooden spoon until just combined. Do not overmix; the batter should be lumpy.

Step 5

If using chopped nuts, fold them into the batter gently.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely.

Step 9

Enjoy your Spiced Up Muffins warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
