  • 1 cup red lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 cup water
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and diced carrots, and sauté for 5-7 minutes until softened.
