Ingredients

  • 4 pieces Tilapia fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Mango, diced
  • 1 cup Black beans, rinsed and drained
  • 1 medium Red bell pepper, diced
  • 0.25 cup Red onion, finely chopped
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Lime juice
  • 1 small Jalapeño, seeded and finely chopped
  • 0.25 teaspoon Kosher salt

Directions

Step 1

In a small bowl, combine smoked paprika, garlic powder, ground cumin, chili powder, salt, and black pepper.

Step 2

Pat the tilapia fillets dry with paper towels. Rub both sides of the fillets evenly with the spice mixture.

Step 3

Heat olive oil in a large non-stick skillet over medium heat. Once hot, add the tilapia fillets.

Step 4

Cook the fillets for 3-4 minutes on one side, then carefully flip and cook the other side for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork. Remove from heat and set aside.

Step 5

To prepare the mango black bean salsa, combine diced mango, black beans, red bell pepper, red onion, cilantro, lime juice, jalapeño, and kosher salt in a medium-sized mixing bowl. Stir gently to combine and let sit for at least 5 minutes for the flavors to meld.

Step 6

Plate the tilapia fillets on serving plates and top with a generous scoop of mango black bean salsa.

Step 7

Serve immediately and enjoy!
