Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter (softened)
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar (packed)
  • 2 count large eggs
  • 2 teaspoons vanilla extract
  • 0.5 cup whole milk
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with cupcake liners.

Step 2

In a medium mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to beat together the softened butter, granulated sugar, and brown sugar until pale and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk in two additions. Start and end with the dry ingredients. Mix until just combined; be careful not to overmix.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a tea cake comes out clean.

Step 8

Remove the tea cakes from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Before serving, dust the tops of the tea cakes with powdered sugar for a simple, elegant finish. Serve with a cup of tea or coffee and enjoy!
