Ingredients

  • 8 lbs Bone-in ham (fully cooked)
  • 1.5 cups Tangerine juice (freshly squeezed)
  • 2 tbsp Tangerine zest
  • 0.75 cups Brown sugar
  • 0.25 cups Honey
  • 1 tsp Ground cinnamon
  • 0.25 tsp Ground cloves
  • 0.5 tsp Ground ginger
  • 2 tbsp Dijon mustard
  • 2 tbsp Unsalted butter
  • 6 slices Tangerine slices (optional, for garnish)
  • 20 pieces Whole cloves (optional, for studding)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Place the ham on a roasting rack in a large roasting pan. If desired, score the surface of the ham in a diamond pattern and stud the intersections with whole cloves for extra flavor and presentation.

Step 3

In a medium saucepan over medium heat, combine the tangerine juice, tangerine zest, brown sugar, honey, ground cinnamon, ground cloves, ground ginger, Dijon mustard, and unsalted butter.

Step 4

Bring the mixture to a simmer, stirring frequently, until the sugar dissolves completely, and the glaze thickens slightly, about 5 minutes. Remove from heat and set aside.

Step 5

Brush a generous layer of the spiced tangerine glaze all over the ham, making sure to coat every surface evenly.

Step 6

Cover the ham loosely with aluminum foil and bake in the preheated oven for 1 hour.

Step 7

After 1 hour, remove the foil and brush the ham with more glaze. Continue baking, uncovered, for an additional 30-60 minutes, basting with glaze every 15 minutes. The ham is done when it reaches an internal temperature of 140°F (60°C).

Step 8

Once done, remove the ham from the oven and let it rest for 10-15 minutes before carving.

Step 9

Garnish with tangerine slices if desired and serve warm.
