Ingredients

  • 750 ml Dark rum
  • 1 whole Vanilla bean
  • 2 sticks Cinnamon stick
  • 2 pods Star anise
  • 5 whole Cloves
  • 5 whole Allspice berries
  • 0.5 teaspoons Nutmeg
  • 0.5 teaspoons Whole black peppercorns
  • 1 strip Orange peel
  • 2 tablespoons Brown sugar

Directions

Step 1

Split the vanilla bean lengthwise to expose the seeds.

Step 2

In a clean glass jar or bottle with a tight-fitting lid, combine the dark rum, vanilla bean, cinnamon sticks, star anise, cloves, allspice berries, nutmeg, black peppercorns, and the orange peel.

Step 3

Add the brown sugar to the jar and stir or shake gently to help dissolve the sugar.

Step 4

Seal the jar or bottle tightly and store it in a cool, dark place for at least 3 to 5 days. Shake the jar gently once a day to distribute the flavors.

After the infusion period, strain the rum through a fine mesh strainer or cheesecloth into a clean bottle or jar, discarding the solids.
