Ingredients

  • 1.5 lbs Pork tenderloin
  • 2 tbsp Olive oil
  • 2 tbsp Brown sugar
  • 1 tbsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Cayenne pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Trim any excess fat or silver skin from the pork tenderloin and pat it dry with paper towels.

Step 3

In a small bowl, combine the brown sugar, paprika, garlic powder, ground cumin, ground coriander, dried oregano, salt, black pepper, and cayenne pepper to make the spice rub.

Step 4

Drizzle the olive oil over the pork tenderloin and rub it evenly to coat.

Step 5

Sprinkle the spice rub over the pork tenderloin, ensuring it’s fully coated on all sides. Press the spices into the meat gently for better adhesion.

Step 6

Heat an oven-safe skillet over medium-high heat. Once the skillet is hot, sear the pork tenderloin for 2-3 minutes on each side until a golden-brown crust forms.

Step 7

Transfer the skillet to the preheated oven and roast the pork tenderloin for 18-20 minutes or until it reaches an internal temperature of 145°F (63°C).

Step 8

Remove the pork tenderloin from the oven and transfer it to a cutting board. Let it rest for 5-10 minutes to allow the juices to redistribute.

Step 9

Slice the pork tenderloin into 1-inch thick medallions and serve warm with your favorite side dishes.
