Ingredients

  • 6 whole ripe but firm red pears (such as Bosc or Anjou)
  • 750 ml dry red wine
  • 150 g granulated sugar
  • 2 sticks cinnamon sticks
  • 1 pod whole star anise
  • 4 cloves whole cloves
  • 1 tsp vanilla extract
  • 1 strip (about 2 inches long) orange zest
  • 250 ml water
  • 2 tbsp optional honey for drizzling

Directions

Step 1

Wash the pears thoroughly and, using a vegetable peeler or paring knife, peel the pears while leaving the stems intact for presentation. Optionally, use a melon baller to core from the bottom if desired.

Step 2

In the crock pot, combine the red wine, granulated sugar, water, cinnamon sticks, star anise, cloves, vanilla extract, and orange zest. Stir gently to dissolve the sugar.

Step 3

Carefully place the peeled pears upright into the crock pot so they are mostly submerged in the wine mixture.

Step 4

Cover the crock pot with the lid and set it to low heat. Cook for 4 hours, gently basting the pears in the wine mixture every hour if possible to ensure even flavor infusion.

After 4 hours, check the pears for doneness by inserting a fork or skewer into the flesh; it should slide in easily but the pears should retain their shape.
