  • 425 g pumpkin puree
  • 240 ml heavy cream

  • 1 large egg yolk
  • 150 g granulated sugar
  • 50 g light brown sugar
  • 1.5 tsp ground cinnamon
  • 1 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.5 tsp salt
  • 1 tsp pure vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the oven rack in the center position.

Roll out the prepared pie crust and fit it into a 9-inch pie dish. Trim any excess dough, leaving about a 1/2-inch overhang. Fold the edges under and crimp as desired. Place the crust in the refrigerator to chill while preparing the filling.
