Ingredients

  • 500 g ripe plums
  • 1 large red onions
  • 150 g brown sugar
  • 120 ml apple cider vinegar
  • 50 g raisins
  • 2 cm piece fresh ginger
  • 2 garlic cloves
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp ground allspice
  • 0.25 tsp chili flakes
  • 1 tsp salt
  • 0.5 tsp pepper

Directions

Step 1

Wash and pit the plums, then cut them into quarters. Set aside.

Step 2

Peel and dice the red onion finely. Mince the garlic cloves and grate the fresh ginger.

Step 3

In a large, heavy-bottomed saucepan, combine the diced onion, minced garlic, and grated ginger with the apple cider vinegar and brown sugar.

Heat the mixture over medium heat, stirring frequently, until the sugar dissolves completely.

Add the quartered plums, raisins, ground cinnamon, ground cloves, ground allspice, chili flakes, salt, and pepper. Stir to combine thoroughly.
