Ingredients

  • 1 cup Pecans
  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Salt
  • 0.5 cup Salted butter, cold and cubed
  • 2 tablespoons Ice water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Spread the pecans onto a baking sheet and toast them in the preheated oven for 5-7 minutes, until fragrant. Let them cool completely before proceeding.

Once cooled, pulse the toasted pecans in a food processor until they are finely ground, but not so much that they turn into paste.

Add the all-purpose flour, granulated sugar, ground cinnamon, ground nutmeg, and salt into the food processor with the ground pecans. Pulse a few times to combine.

Add the cold cubed butter into the food processor and pulse until the mixture resembles coarse crumbs. Be cautious not to overmix.

Add the ice water one tablespoon at a time, pulsing between additions, until the dough just starts to come together when pinched. Avoid adding too much water.

Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

After chilling, roll the dough out on a floured surface to fit a standard 9-inch pie dish.
