Ingredients

  • 6 cups ripe pears (peeled, cored, and chopped)
  • 1 cup granulated sugar
  • 0.5 cup brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.5 cup water

Directions

Step 1

Peel, core, and chop the pears into small pieces. Measure out 6 cups of prepared pears and set aside.

Step 2

In a large heavy-bottomed pot, combine the chopped pears, water, and lemon juice. Stir to coat the pears and prevent browning.

Step 3

Place the pot over medium heat and bring the mixture to a simmer. Cover with a lid and cook for 20–25 minutes, stirring occasionally, until the pears are soft and tender.

Step 4

Remove the pot from the heat and use an immersion blender to puree the pears until completely smooth. Alternatively, transfer the cooked pears to a blender or food processor, blend until smooth, and return the puree to the pot.

Step 5

Add the granulated sugar, brown sugar, cinnamon, ginger, nutmeg, and cloves to the pot with the pear puree. Stir well to combine.

Step 6

Return the pot to the stove over low heat. Simmer the mixture uncovered for 60–90 minutes, stirring frequently to prevent sticking or burning. The pear butter is ready when it has thickened to a spreadable consistency and darkened in color.

Step 7

To test doneness, spoon a small amount onto a plate. If the liquid does not pool around the edges, it's ready.

Step 8

Remove the pot from the heat and let the spiced pear butter cool slightly before transferring it to sterilized jars. Seal tightly and store in the refrigerator for up to 3 weeks or process in a water bath for long-term storage.
