Ingredients

  • 300 grams Mixed olives (green and black)
  • 3 tablespoons Olive oil
  • 1 teaspoon Orange zest
  • 2 cloves Garlic cloves, thinly sliced
  • 1 sprig Rosemary sprigs
  • 2 sprigs Thyme sprigs
  • 1 leaf Bay leaf
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Ground coriander
  • 0.5 teaspoon Fennel seeds
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Rinse the mixed olives under cold water to remove excess brine. Drain well and set aside.

Step 2

In a large skillet or saucepan, heat the olive oil over medium heat.

Step 3

Add the orange zest, sliced garlic, rosemary, thyme, and bay leaf to the skillet. Stir for about 1 minute to release their aroma.
