  • 4 cups vegetable broth
  • 1 14.5-ounce can canned diced tomatoes
  • 1 15-ounce can, rinsed and drained black beans
  • 1 cup (fresh or frozen) corn kernels
  • 2 tablespoons lime juice
  • 0.25 cup chopped fresh cilantro
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper

Directions

Step 1

Peel and cube the butternut squash into 1-inch pieces and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat.
