Ingredients

  • 4 pounds pork spareribs
  • 0.5 cups maple syrup
  • 0.25 cups soy sauce
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic cloves, minced
  • 1 teaspoons ground ginger
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoons smoked paprika
  • 0.25 teaspoons cayenne pepper
  • 2 tablespoons brown sugar
  • 2 teaspoons salt
  • 1 teaspoons black pepper
  • 1 cups water

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Remove the membrane from the back of the spareribs for more tender results, if it hasn’t been done already.

Step 3

In a small bowl, combine salt, black pepper, smoked paprika, ground ginger, ground cinnamon, and cayenne pepper. Mix well to create a dry rub.

Rub the spice mixture generously all over the spareribs, making sure to coat evenly.

Step 5

Place the ribs on a large baking sheet lined with aluminum foil or a roasting rack. Add 1 cup of water to the bottom of the pan to keep the ribs moist during cooking.

Cover the ribs tightly with aluminum foil and bake in the preheated oven for 2 1/2 hours, or until the meat starts to pull away from the bones and is tender.

In the meantime, prepare the glaze. In a medium saucepan over medium heat, combine maple syrup, soy sauce, apple cider vinegar, brown sugar, and minced garlic. Stir well and let the mixture simmer for 5-7 minutes, until slightly thickened. Set aside.

After the ribs have finished baking, remove them from the oven and increase the oven temperature to 400°F (200°C).

Brush a generous amount of the maple glaze over the ribs, coating them completely.

Return the ribs to the oven, uncovered, and bake for an additional 15-20 minutes, or until the glaze is caramelized and sticky.

Remove ribs from the oven, let them rest for 5 minutes, and then slice into individual portions.
