  • 8 small Corn or flour tortillas
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Shredded cheese (optional)
  • 1 large Sliced avocado
  • 0.25 cup Sour cream or plain Greek yogurt (optional)
  • 2 tablespoons, chopped Cilantro (optional)
  • 1 lime, cut into wedges Lime wedges

Directions

Step 1

Rinse the lentils thoroughly under cold water.

In a medium saucepan, add the lentils and water. Bring to a boil, then reduce the heat and simmer uncovered for 20-25 minutes, or until the lentils are tender but not mushy. Drain any excess water and set aside.
