  • 1 cup dried green lentils, rinsed
  • 6 cups low-sodium chicken broth
  • 1 14-ounce can diced tomatoes (canned, with juices)
  • 1 whole bay leaf
  • 0 salt, to taste
  • 0 black pepper, to taste
  • 2 cups baby spinach
  • 1 tablespoon lemon juice

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Add the sliced chicken sausage and brown for 5-7 minutes, stirring occasionally. Remove the sausage from the pot and set aside.
