  • 1 14-ounce can crushed tomatoes
  • 2 cups baby spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 425 °F (220 °C).

Peel and dice the sweet potato and carrots into bite-sized cubes. Cut the red bell pepper into chunks and roughly chop the onion.
