Ingredients

  • 500 grams lamb shoulder (or leg), diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • 8 pieces wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

In a large mixing bowl, combine olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, black pepper, salt, and lemon juice.

Step 3

Add the diced lamb to the bowl and toss until all pieces are evenly coated with the marinade.

Step 4

Cover the bowl with plastic wrap and let the lamb marinate in the refrigerator for at least 1 hour (or up to 24 hours for more flavor).

Step 5

Preheat your grill or grill pan to medium-high heat.

Step 6

Thread the marinated lamb pieces onto the skewers, leaving a small amount of space between each piece for even cooking.

Step 7

Place the skewers on the preheated grill and cook for about 10-12 minutes, turning every 2-3 minutes, until the lamb is evenly browned and cooked to your desired level of doneness.

Step 8

Once cooked, remove the skewers from the grill and let them rest for 5 minutes.

Step 9

Sprinkle chopped fresh parsley over the skewers before serving.

Step 10

Serve warm with pita bread, tzatziki, or a side salad for a complete meal.
