  • 3 pounds beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 0.5 teaspoons ground cinnamon
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 4 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and quartered
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 4 fresh thyme sprigs

Directions

Step 1

In a small bowl, mix together the salt, black pepper, smoked paprika, ground cinnamon, and ground cumin to create a spice rub.

Pat the chuck roast dry with paper towels, then rub the spice mixture evenly over the surface of the roast.

Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side, until a golden crust forms. Remove from heat and set aside.
