Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 tablespoons olive oil

  • 0.5 teaspoons salt
  • 0.5 cup raisins
  • 0.25 cup sliced almonds
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Bring 1.25 cups of water to a boil in a medium saucepan. Add 0.5 teaspoons of salt and 1 tablespoon of olive oil to the water.

Step 2

Remove the saucepan from heat. Stir in 1 cup of couscous, cover with a lid, and let it sit for 5 minutes to absorb the water.

Step 3

While the couscous is resting, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add 0.5 teaspoons of ground cinnamon, ground cumin, and ground coriander. Stir for about 30 seconds until fragrant.

Step 4
