Heat the olive oil in a large skillet or saucepan over medium heat. Add the diced onion, chopped carrot, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
Add the ground beef to the pan. Cook for 8-10 minutes, breaking it apart with a spoon, until browned and fully cooked.
