Ingredients

  • 1 cup All-purpose flour
  • 1 cup Cornmeal
  • 0.33 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Ground paprika
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.75 cup Whole milk
  • 4 tablespoons Unsalted butter, melted and cooled slightly
  • 2 tablespoons Honey
  • 2 tablespoons Chopped fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C), and line a 12-cup muffin tin with paper liners or lightly grease each cup with non-stick spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, granulated sugar, baking powder, ground cinnamon, ground cumin, ground paprika, and salt until well combined.

Step 3

In a medium bowl, beat the eggs lightly, then whisk in the milk, melted butter, and honey until fully incorporated.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Do not overmix—the batter should be slightly lumpy.

Step 5

If using chopped fresh cilantro, gently fold it into the batter until evenly distributed.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each one about 3/4 full.

Step 7

Bake in the preheated oven for 16–18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool for 5 minutes in the tin before transferring them to a wire rack to cool completely.

Step 9

Serve warm with butter or as a savory side to your favorite meals. Enjoy!
