  • 2 eggs, large
  • 0.75 cup strong brewed coffee, cooled
  • 0.25 cup whole milk
  • 1 teaspoon vanilla extract
  • 0.75 cup chopped walnuts (or pecans)
  • 0.5 cup powdered sugar (for optional glaze)
  • 1 tablespoon brewed coffee (for optional glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper for easier removal.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
