Ingredients

  • 4 pieces Chicken thighs (boneless, skinless)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 medium, sliced Red onion
  • 1.5 tablespoons Honey
  • 1 cup Couscous
  • 1.25 cups Chicken stock
  • 2 tablespoons Lemon juice
  • 2 tablespoons, chopped Fresh parsley
  • 2 tablespoons Toast almonds or pine nuts (optional)

Directions

Step 1

In a small bowl, mix the ground cumin, coriander, paprika, ground cinnamon, salt, and black pepper.

Step 2

Rub the spice mixture evenly over the chicken thighs and set them aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the spiced chicken and cook for about 5-6 minutes per side, or until golden brown and fully cooked. Remove the chicken from the skillet and let it rest on a plate.

In the same skillet, add the remaining 1 tablespoon of olive oil and sliced red onions. Cook over medium heat for 8-10 minutes, stirring occasionally, until the onions are soft and caramelized.
