Ingredients

  • 1 medium head (about 1.5 lbs) Cauliflower
  • 2 tablespoons Olive oil
  • 1 medium, chopped Yellow onion
  • 3 minced Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Smoked paprika
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper
  • 2 tablespoons (chopped, for garnish) Fresh cilantro

Directions

Step 1

Start by prepping the cauliflower: remove the leaves, cut the cauliflower into florets, and rinse them under cold water. Set aside.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes, or until softened and translucent.

Step 3

Add the minced garlic to the pot and cook for another 1-2 minutes, stirring frequently to prevent burning.

Step 4

Stir in the ground cumin, ground coriander, turmeric powder, and smoked paprika. Cook for 1 minute to toast the spices and release their aroma.

Step 5

Add the cauliflower florets to the pot and stir to coat them evenly with the spice mixture.

Step 6

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the cauliflower is tender.

Step 7

Once the cauliflower is soft, use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, you can allow the soup to cool slightly and use a countertop blender, working in batches if needed.

Step 8

Stir in the coconut milk and season the soup with salt and black pepper to taste. Cook for another 2-3 minutes over low heat to warm through.

Step 9

Serve the spiced cauliflower soup hot, garnished with chopped fresh cilantro. Pair with crusty bread or naan for a complete meal.
