Ingredients

  • 6 medium carrots
  • 1 medium yellow onion

  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 2 tablespoons fresh cilantro
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and chop the carrots into small chunks. Peel and dice the yellow onion. Mince the garlic cloves.

Step 2

Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
