Ingredients

  • 500 ml Beer (lager, stout, or ale)
  • 400 g Granulated sugar
  • 1 packet Powdered pectin
  • 0.5 tsp Ground cinnamon
  • 0.5 tsp Ground ginger
  • 4 pcs Whole cloves
  • 2 tbsp Lemon juice
  • 250 ml Water

Directions

Step 1

In a medium saucepan, combine the beer and water. Add the whole cloves, ground cinnamon, and ground ginger. Bring the mixture to a simmer over medium heat and let it steep for 10 minutes.

Strain the liquid through a fine mesh sieve to remove the cloves and any spice sediment, then return the liquid to the saucepan.

Whisk in the granulated sugar and lemon juice. Stir until the sugar is completely dissolved.

Step 4

Bring the mixture to a rolling boil over high heat, then whisk in the powdered pectin gradually. Stir continuously to prevent lumps.

Once the mixture is boiling vigorously, reduce the heat to medium and let it boil for another 2-3 minutes, stirring frequently.

To test if the jelly is set, drop a small amount onto a chilled plate. Allow it to cool for a few seconds and check if it wrinkles slightly when pushed with your finger. If not, boil for another 1-2 minutes and test again.
