  • 2 cups beef broth
  • 2 tbsp olive oil
  • 2 leaves bay leaves
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Pat the beef chuck roast dry with paper towels and season generously with salt and black pepper on all sides.

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Sear the beef for 4-5 minutes per side until deeply browned. Once seared, remove the beef from the pot and set aside.

In the same pot, reduce the heat to medium and add the chopped onion. Sauté for 5-6 minutes until softened and translucent.

Add the minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, ground allspice, and red chili flakes to the pot. Stir and cook for 1-2 minutes until the spices are fragrant.
