Ingredients

  • 3 large ripe bananas
  • 150 grams granulated sugar
  • 50 grams light brown sugar
  • 115 grams unsalted butter
  • 2 pieces large eggs
  • 2 teaspoons vanilla extract
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 60 milliliters milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.

Step 2

In a large bowl, mash the ripe bananas until smooth. Set aside.

Step 3

Melt the unsalted butter and let it cool slightly. Add the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk until thoroughly combined.

Step 4

In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.

Step 5

Gently fold the dry ingredients into the banana mixture, being careful not to overmix. The batter should be slightly lumpy.

Step 6

Add the milk and fold it in to loosen the batter slightly.

Step 7

Evenly divide the batter into the prepared muffin tin, filling each cup about 3/4 full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 9

Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Enjoy your delicious spiced banana muffins!
