Ingredients

  • 250 grams All-purpose flour
  • 125 grams Cold unsalted butter
  • 50 grams Powdered sugar
  • 2 large Egg yolk
  • 2 tablespoons Cold water
  • 200 grams Walnuts (chopped roughly)
  • 150 grams Golden syrup
  • 75 grams Brown sugar
  • 25 grams Breadcrumbs
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 100 milliliters Heavy cream
  • 1 large Egg
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large bowl, sift the flour and powdered sugar together. Add the cold butter, cubed, and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.

Step 2

Add the egg yolks and cold water. Mix until the dough just comes together, being careful not to overwork it.

Step 3

Roll the dough into a ball, flatten into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Preheat your oven to 180°C (350°F). Roll out the chilled pastry on a floured surface to fit a 9-inch tart tin. Press it gently into the tin, trim the edges, and prick the base with a fork.
