Ingredients

  • 1.5 cups Whole wheat flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Salt
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Maple syrup
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 0.5 cups Unsweetened almond milk (or milk of choice)
  • 1 cup Grated apple
  • 0.25 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups with non-stick spray.

Step 2

In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.

Step 3

In another mixing bowl, whisk together the unsweetened applesauce, maple syrup, egg, vanilla extract, and almond milk until smooth.

Step 4

Add the wet ingredients to the dry ingredients and mix gently until just combined. Do not overmix; the batter should be lumpy.

Step 5

Fold in the grated apple and chopped walnuts (if using) with a spatula, ensuring they are evenly distributed throughout the batter.

Step 6

Portion the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 9

Enjoy these healthier spiced apple muffins warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
