Ingredients

  • 200 g All-purpose flour
  • 100 g Ground almonds
  • 150 g Granulated sugar
  • 50 g Light brown sugar
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1.5 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.25 tsp Salt
  • 120 g Unsalted butter, melted and cooled
  • 3 large Eggs, at room temperature
  • 1 tsp Vanilla extract
  • 100 ml Unsweetened applesauce
  • 2 large Granny Smith apple, peeled, cored, and diced
  • 50 g Sliced almonds
  • 1 tbsp Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake tin and line the base with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, ground almonds, granulated sugar, light brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

In another bowl, mix the melted butter, eggs, vanilla extract, and applesauce until smooth and well combined.

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just incorporated. Do not overmix.
