  • 4 tablespoons unsalted butter

  • 0.25 teaspoons black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and dry the acorn squashes. Carefully cut each squash in half lengthwise and scoop out the seeds with a spoon.

Slice each squash half into 1-inch thick wedges. Place the wedges on a large baking sheet lined with parchment paper or a silicone baking mat.
