Ingredients

  • 300 g Dried mixed fruits (raisins, sultanas, currants)
  • 250 ml Strong brewed black tea (cooled)
  • 250 g Wholemeal flour
  • 100 g Brown sugar
  • 1 large Egg
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.25 tsp Salt

Directions

Step 1

Place the dried mixed fruits in a mixing bowl and pour the cooled tea over them. Cover and let the fruits soak for at least 2 hours or overnight to plump up.

Step 2

Preheat your oven to 160°C (320°F) or 140°C (284°F) fan. Grease and line a 2lb loaf tin with parchment paper.

Step 3

In a large mixing bowl, combine the wholemeal flour, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt.

Step 4

Drain any excess tea from the soaked fruits and add the fruits to the dry mixture. Stir well to ensure the fruits are evenly distributed.

Step 5

In a small bowl, beat the egg and add it to the mixture. Stir everything together until fully combined. The batter will be thick.

Step 6

Spoon the mixture into the prepared loaf tin, smoothing the top with the back of a spoon.

Step 7

Bake in the preheated oven for 60 minutes or until a skewer inserted into the center of the loaf comes out clean.

Step 8

Once baked, remove the loaf from the oven and let it cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Step 9

Slice and serve on its own or spread with a bit of butter for an extra treat.
